Apple Kale Smoothie: an energy booster & great for runners or anyone
If there's a smoothie to try, I highly recommend this one. It is a delicious smoothie packed with vitamins and antioxidants, and you can make it ahead of time too. It is an energy booster and a perfect smoothie to have before early morning workout, early start of a work day or at any time, really.
I've had a few friends, friends of friends asking me about this Apple Kale Smoothie I have several times during the week in the morning or mid-afternoon as a pick me up snack. I actually stumbled upon it when I got the Run Fast. Eat Slow. http://bit.ly/RunFastEatSlowDrift recipe book by Shalane Flanegan and Elyse Kopecky. But overtime, I have changed their recipe depending on what I have available in the pantry. The recipe I'm sharing here is my own mix adapted from Run Fast. Eat Slow..
Place the following in a blender or Vitamix, makes a little over 2 servings.
1 cup coconut water (make sure that the only ingredient is coconut & no natural flavors)
1 cup unsweetened almond milk (I use Califa http://bit.ly/CalifaAlmondMilk ) *When I have time to make homemade almond milk I use that instead of store bought.
1 green apple quartered *I like to use frozen apples which I freeze myself. Cut, seed & quarter the apples, place in a freezer bag then freeze for up to 1 mo.
1 large kale leaf, stem removed
1 banana *I like to use frozen banana which I freeze myself. Peel and half the bananas, place in a freezer bag then freeze for up to 1 mo.
1 tablespoon peanut butter ( I use CB Peanut Butter http://bit.ly/CBPeanutButter crunchy, 1 ingredient only)
1 tablespoon almond butter (I use Maisie Jane's http://bit.ly/MaisieJaneAlmondButter )
1 tablespoon maple syrup
2 tablespoons hemp hearts or oats
Blend until smooth or to your preference and ENJOY!
Making in batches & store: I like to make this smoothie in batches and store in Mason jars for the week. It keeps really well for up to 3 days in the refrigerator. When you are ready to have it, just shake it well (as some of the kale and apples might have settled at the bottom) and enjoy. Depending on my week, I sometimes use hydroflasks http://bit.ly/12ozhydroflask to store in the refrigerator so I can just take it with me on the go (hydroflask keeps the smoothie cold up to 4 hrs +.)
Why these ingredients in the mix: Kale and green apples: rich in vitamins and antioxidants; Peanut Butter/Almond Butter: fats in this "gives lasting power and helps your body better absorb the incredible fat-soluble nutrients," according to Shalane and Elyse; Maple syrup: it's rich in minerals, vitamins & also has vitamin B6; Hemp hearts: rich in Omega3 fatty acid essential for muscle and joint repair; Banana: for obvious reasons of course, my body always seems to crave for it so why not just add it in the smoothie.
Whether you run or not, try this smoothie any time of the day. I love having it in the afternoon instead of coffee then it gives me a longer lasting energy especially if I am going to an early evening workout may it be yoga, running or bouldering. Enjoy!
